Aubergine with Red Lentils
We have tried this vegetarian recipe some days ago. It is not difficult to make it and it also tastes very well. We really enjoyed this meal so we decided to share the recipe with you. Enjoy it! :)
Ingredients (Serves 2)
- 1 large aubergine
- 150g red lentils
- 50g butter
- small red pepper, chopped
- 1 onion, chopped
- 50g breadcrumbs
- 50g Cheddar cheese, grated
- salt and white pepper
Method
- Preheat the oven to Gas Mark 6/200ºC/400ºF
- Cut the aubergines in half lengthways and scoop out the flesh. Keep the shells intact.
- Chop the flesh and sprinkle with salt. Stand for 15 minutes and rinse well.
- Put the red lentils in a saucepan and cover with cold water. Bring to the boil, skim and boil rapidly for 10 minutes uncovered. Reduce the heat and simmer for 15-20 minutes. Drain.
- Melt the butter and gently fry the onion, red pepper and aubergine flesh till soft. Add lentils and fry a little more.
- Mix in all the other ingredients (except the aubergine).
- Pile the filling into the aubergine shells and bake uncovered for 30 minutes.

Well you both know my I’m more of a meat and chocolat eater :D hehehe Maybe if you publish some kind of chocolat cake recipe I’ll give it a try… But veggy things are just too much for me :D (yeah start telling me it’s better for health, maybe one day I’ll start eating it)
